Fluffy American Pancakes!

Halooooooo! How are you?

I made the most AMAZING pancakes this morning, so I’m going to tell you how I made them cause… why not? This recipe will make 5 or 6 pancakes so feel free to double the quantities of the ingredients if you want more 😉

First of all you will need:

  • A bowl
  • A jug
  • 135 g/4¾oz plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp caster sugar
  • 130ml/4½fl oz milk
  • 1 large egg, lightly beaten
  • 2 tbsp melted butter (allowed to cool slightly) or olive oil, plus extra for cooking

  1. Sift the flour, baking powder, sugar and salt into your bowl, then, pour your milk and egg into your jug and whisk lightly, now add the melted butter, make sure you keep stirring just in case the butter cooks the egg. IMG_4053
  2. Pour the milk mixture into the flour mixture and beat using a fork get rid all them lumps! Let the batter stand for a few minutes (seconds if you’re impatient like me)
  3. Heat a non stick frying pan on medium heat add a bit of butter then proceed to add a ladle of batter. It’s perfectly normal that the batter is a bit thick.
  4. When the top of the pancakes bubble flip it over and cook the other side until golden brown.
